Just outside Ruhengehri, beside a refugee camp, we visit Samuel the cheese supplier who we met at Sun and Moon pizzeria that first week in Kigali. He produces Rwanda's only mozarella cheese as well as gouda, creme fresh and butter. After a tour of his factory, Samuel invites us for a huge mug (pint?) of hot milk, 1 hour out of the cow. We buy an icecream tub full of butter (which turns out to be sour ghee, used for cooking) and some gouda cheese.
